Avocado/kefir smoothie

You will need a strong blender to make this smoothie. I use a Blendtec. The smoothie may be very thick, depending on ingredients. You can add up to ¼ cup of water to loosen. The kefir can be found in most supermarkets in the dairy section. I make my own kefir from raw milk (see my What To Do With Raw Milk Post).

Ingredients

  • 1 cup kefir (I use plain to avoid added sugar)

  • 1/2 medium, soft avocado

  • 2-3 T coconut cream (You can use Thai Kitchen brand or similar but make sure it is “cream” not milk so that it will be creamier)

  • 1 packet sweetener (your choice, I use stevia)

  • 1 tsp coffee crystals (I use decaf)

  • 1 egg yoke (optional, use a high quality farm egg)

Directions

  • Put all ingredients in blender and blend till smooth.

Notes

  • Here is my Blendtec. It has the “Wildside” jar which allows me to slip a single serving cup inside so that my smoothie is blended in it’s own serving cup!
