Custard recipe

I love eating a lot of fat! That is how I stay slim. (A topic for another blog). High quality saturated animal fat is not dangerous but actually good for the human body. Fat from animals on pasture (grazing on the food mother-nature intended) provides the fat-soluble vitamins that we need.

I am always looking for a way to use dairy cream. This is one of my favorites. You can use raw milk cream or a high quality pasteurized cream from the supermarket.

Ingredients

  • 4 organic or pastured eggs

  • 1 tsp vanilla extract

  • 2 cups whipping cream (I like Kalona Organic)

  • 1/2 tsp Stevia powder (approx equivalent to 8 tsp sugar).

Directions

  • Beat the eggs in a bowl, add the vanilla
  • Heat the cream in a double boiler till hot.
  • Pour the cream into the eggs whisking at the same time.
  • Add the stevia to the mixture
  • Return mixture to double boiler and stir with wooden spoon until it thickens and “coats” the spoon.
  • Pour into a baking dish or glass bowl. Chill

Notes

  • You can reduce the recipe by using 1 1/2 cups of cream and 3 eggs. Reduce the stevia a bit. Continue with recipe. I have not tried substituting other sweeteners for the stevia so if you want to try another one, try to add the equivalent of 8 tsp sugar.
Here is Kalona brand whipping cream. I purchase this at Natural Grocers but should be available at other health food supermarkets (at least in the Texas area)
