Weston Price Foundation Conferences never disappoint. I attended my eleventh annual conference in late October in Knoxville Tennessee. First, let me say that the countryside around Knoxville is beautiful! There are rolling hills, trees, and farmland. If I did not live in Texas I would live in Tennessee. Apparently a lot of other people think the same way as the state is growing fast.
What is a Weston Price Conference you ask? It is all about “traditional diets” and learning about the way people ate before processed foods hit the market. Dr. Weston Price was a dentist in the 1920’s to 1940’s. He traveled around the world visiting locations where people ate “traditional” foods, and proved (through the use of thousands of photographs of facial structure and teeth) that eating less processed foods and more “traditionally prepared foods” provided the nutrients for tissue repair in adults as well as for growth of children.
As humans, we are supposed to have wide faces, wide dental pallets (with room for all the teeth) and wide hips (females) and wide shoulders (males). People eating traditional diets get enough vitamin A, D, and K2 to build wide faces and straight teeth. Here are photos from Dr Price’s travels.
During the Weston Price conference, we learned how to recognize and prepare foods as people did long ago. Even the hotel meals were all prepared in ways that demonstrated to the attendees the dietary principles that Dr. Price discovered. These foods included fermented items, full fat meats and raw dairy products, fresh organic produce, and sourdough breads. The photo shown below includes onion soup (prepared from a bone broth), roasted chicken and vegetables, with fermented carrots and ghee. Yum!
The conference was well attended with over 1500 people. I met many folks who were attending for the first time. The attendees were all looking for ways to improve health, become more self-sufficient, and connect with each other. The conference featured wonderful speakers, a few of which I have outlined below. The topics were varied.
Two speakers were my favorites, Dr. Thomas Cowan and Catherine Austin Fitts.
Thomas Cowan M.D
The ever-popular Dr. Thomas Cowan spoke about “What Doesn’t Make You Sick” and the polar opposite topic “What Does Make You Sick”. If any of you have been following the debate on whether viruses exist, this one is for you. I remain firmly seated on the fence but I can see the argument on both sides. Dr. Cowan says that there is no definitive research showing that wild (my word) virus’s (strings of RNA or DNA) found in a capsid coating actually exists in a cell. They are too small to see. Electron microscope photos of goop extracted from a sick person is not good enough he says. I might agree. That said, I have learned that man-made viruses do exist. There are patents on them and they are created by putting together nucleic acids in the desired sequence to create a string that is encased in a capsid coating. These can be manufactured in labs. Here is a patent on a virus that infects canines. Here is one for the SARS Corona virus.
So, what does make you sick according to Dr. Cowan, if it is not viruses? It comes down to the disruption of the crystalline nature of the water molecules in your cells. Water molecules align by their polarity to form a crystalline structure inside cells. This crystalline structure acts like a gel. Gels have the capability to move electrons very quickly. The movement of electrons is how cells communicate and nerves work in your body. Disease is anything that distorts or disturbs the gels. It might be pesticides, radiation, metals, GMO foods, bacteria, etc. When you get sick, the body uses fever to dissolve or melt a damaged gel structure and it is removed from the body in the form of mucus, cough, runny nose, etc. The mucus, cough, runny nose and fever is what we call “being sick”. This is a fascinating theory by Dr Cowan.
Catherine Austin Fitts
Another of my favorite speakers was Catherine Austin Fitts, of the Solari Report. (I met her and chatted for a few minutes and got her autograph!). Catherine Austin Fitts was Assistant Secretary of Housing and Urban Development during the George H.W. Bush administration among other things. You may ask, what does a financial person have to do with traditional diets at a Weston Price conference? Apparently she is well versed in not only the Weston Price principles of traditional eating but is also an advocate for self-sufficiency and self-reliance. In her keynote speech and in her writings she explained the money laundering and fraud that is deep within the US banking system (Federal Reserve and Central Banks) and the US government. She feels as though the plans that these agencies have to force us onto Central Bank Digital Currencies would remove our individual and collective sovereignty. “The pandemic and accompanying lockdowns have been wildly successful, creating the right environment for total control of society, health, money, and food. Huge portions of the population, influenced by fear and mind control, are in complete submission. Every aspect of life and how it functions is now approaching Mr. Global’s grasp“. She encouraged folks to keep their wits about them, be fully aware of what our government and the big banks are planning for us, and, best of all, use cash every day (“Make Cash Great Again”).
Another speaker was Dr. Leland Stillman
On a different topic, Dr. Leland Stillman talked about iron overload and how we may be getting too much iron and not enough of other nutrients that help control our iron levels. Iron is one of those minerals that is good and bad at the same time depending on dose. The dose makes the poison. You need iron in your blood (hemoglobin) in order to carry oxygen to your cells but “extreme iron overload is uniformly fatal” (such as in hemochromatosis). Iron is also carcinogenic if present at a high dose. Do you know someone who is fighting cancer and was advised not to eat red meat? That is why! Dr. Stillman explains how getting enough vitamin C, A, and B vitamins (B-6, B-9, B-12) from a traditional diet will help the body manage iron. His slides are here. He gives recommendations as to what to do if your serum ferritin is too high. It appears one should get a serum ferritin test almost as often as one should get a cholesterol test. The best way to lower your serum ferritin- give blood!
Dr. Kelly Brogan
The last speaker I will mention was Dr Kelly Brogan. As a functional psychiatrist she talked about antidepressants that do not seem to lead to long term elevation of mood. Do antidepressants cure or create abnormal brain states? She talked about the lack of efficacy in the pharmaceutical industry. She encouraged navigating from dependency to sovereignty (there is that word again) without relying on “big pharma.” She quoted the editor in chief of the New England Journal of Medicine (Dr Marcia Angell) as saying “It is simply no longer possible to believe much of the clinical research that is published or to rely on the judgment of trusted physicians or authoritative medical guidelines. I take no pleasure in this conclusion, which I reached slowly and reluctantly over my two decades as an editor of the New England Journal of Medicine.”
Many people have lost faith in the medical industry (or rather, the “medical industrial complex” as some call it). We have lost touch with our humanity and our body’s ability to heal. Dr. Kelly Brogan had one last quote that I will end with. This is from Dr Nicholas Gonzalez, a physician who treated cancer patients holistically until he passed away in 2015. Before his death, he spoke often at Weston Price conferences. Dr Gonzalez was ahead of his time, as I think his words could have been written today-
“We are in “times of trouble” to be followed by the light of peace, the calm of hope realized, the transcendence of truth. Not now, not yet, but soon. We are in the Suntaleia, the Greek term for Consummation of the Ages, a time of confusion, political strife, hatred of truth, governmental oppression, and the rise toward one-world dictatorship. Then comes the destruction of truth’s enemies, the restoration of the earth, and recognition for those that gallantly stood firm for the truth and its always righteous application. So do not despair, it isn’t necessary to do so, the plan is falling into place, these times are but the birth pangs of the glorious world that will follow.” Nicholas Gonzalez M.D. 1947-2015.

The conference sounds so multifaceted and interesting… Indeed it is a travesty that clinical research is now largely dictated by monied interests and political partisanship. The truth is there for those who seek it, but it seems humanity as a whole, has habitually done it’s best to deny it.
Excellent post Jackie! It made me feel good about our Salmon and stir fried vegetables over rice dinner last night. I think that our biggest departure from the “Dr Price approach” would probably have been the bottled teriyaki sauce that we used when stir frying the veggies. No question it was “processed” and I’m sure has preservatives to increase shelf life… but it was SO tasty! So much to think about here. Thanks for the post.
